Summer is finally here, and Coco is back with special summer recipes to delight your taste buds! From fruity popsicles to icy beverages, ring in the season with simple and scrumptious summer treats!

Coco, AKA, Sulaf Hatab, is a 12-year-old Pono student who is passionate about baking and who runs a local cookie catering business from her kitchen.

RECIPES and Ingredients:

PLEASE HAVE ALL THE INGREDIENTS AND TOOLS ON THE COUNTERTOP READY FOR YOUR CHILDREN BEFORE CLASS BEGINS.

Week 1

LEMON BLUEBERRY POPSICLES

Ingredients

5 ounces vanilla Greek yogurt

4 tbsp fresh lemon juice (about two medium lemons)

½ tsp pure vanilla extract

6 ounces low-fat milk

Zest of one lemon

2 tablespoons agave nectar

¼ cup blueberries

2 Biscoff cookies, crushed

Week 2

MIXED BERRY JAR CAKE

Ingredients

1/2 cup cake flour

1/4 cup plus 1/2 cup sugar

4 large egg whites

1/2 tsp vanilla extract

1/2 tsp cream of tartar

1/8 tsp salt

1 1/2 cups heavy cream

2 tbsp sugar

1/2 tsp vanilla extract

Pinch of salt

1 1/2 cups (or 12 ounces) blueberries

7 large strawberries, cut into 1/4 inch chunks

3/4 cup (or 10 ounces) raspberries

6 small strawberries

6 tall mason jars or any kind of glasses


Week 3

BLACKBERRY COBBLER

Ingredients

3 cups ( or 24 ounces) blackberries

1 1/2 tbsp honey

1/2 tbsp cornstarch

1/4 tsp salt

Grated zest of 1/2 lemon

1/2 cup heavy cream

1/8 cup honey

1 cup all-purpose flour

1/4 cup cornmeal

3/4 tsp baking powder

1/4 tsp salt

1/4 tsp ground cinnamon

1/2 tbsp heavy cream

1 tsp raw sugar

1-quart baking dish


Week 4

STRAWBERRY NICECREAM & PINEAPPLE WHIP NICECREAM

Tools Needed

Blender

2 freezer-safe containers

Ingredients for Strawberry Nice Cream

4 bananas, sliced and frozen

3/4 cup coconut milk

2 tbsp agave nectar or honey

1 1/2 cups strawberries, frozen

1/2 cup strawberries, diced and fresh

STEPS:

1. Cut off the green tops of the ½ cup strawberries. Dice them into small squares.

2. Pour all the ingredients except the fresh strawberries you just diced into your blender,

and blend until completely smooth.

3. When completely blended, fold in the diced fresh strawberries with a spatula.

4. Serve nicecream now if you want a more soft-serve texture. For a more real ice cream

texture, transfer the completed ice cream mixture into a loaf pan or other freezer-safe

container and freeze for four hours.

5. You’re done! Enjoy your nicecream!

Ingredients for Pineapple Whip Nicecream

4 1/2 cups pineapple, chopped and frozen

3/4 cups cream of coconut

STEPS:

1. Take the few chunks of pineapple you set aside and dice it into small squares.

2. Pour all the ingredients except the diced pineapples into a blender and blend until completely smooth. If your blender is having trouble blending the chunks of pineapple,

add more cream of coconut or even a bit of water.

3. Transfer the nicecream to a loaf pan or freezer-safe container and smooth out the top with a spatula.

4. Sprinkle the pineapple we diced over the top.

5. Pop the nicecream in the freezer for about four hours (Even if you want a soft-serve

consistency, freeze the nicecream for four hours; it has a massively different consistency than the strawberry nicecream).

6. You’re done! Enjoy your nicecream!
